Greek Bean Soup (Fasolada)

Ingredients:

1 1/2 cups large lima beans, dry

1/3 cup olive oil

1 onion, chopped

2 carrots, chopped

4-5 celery stalks, chopped

~2 tsp tomato paste and/or a 16oz can tomatoes

water

salt, pepper

Preparation:

Soak beans overnight. Rinse, add fresh water, bring to a boil and simmer for 30 min. Strain. Add onion, celery, carrots, tomato paste and/or canned tomatoes, olive oil to pot with the beans and fresh water, to cover. Bring to a boil and simmer for ~45 min or until soup thickens. Add salt and pepper to taste.
